Beth Israel Congregation of Waterville celebrated the last night of Hanukkah with the lighting of the eighth candle on the menorah Wednesday. The congregation waited until the eighth night to celebrate because the beginning of Hanukkah coincided with Thanksgiving, so they waited until people had returned from holiday trips to celebrate together, said Rabbi Rachel Isaacs.
