Pumpkins and other winter squash have been cultivated in the Americas for thousands of years, one of the “Three Sister” crops, along with corn and beans, that indigenous people rotated or grew together to balance nutrients in the soil.

In her book “Pumpkin: The Curious History of an American Icon,” Cindy Ott found that their heartiness made pumpkins a subsistence crop for early U.S. settlers. As industrial farming grew in the 19th century and people ate them less, they started to become nostalgic symbols of old-time farming and natural abundance.
