COMING SOON: CUSHNOC CANTINA
Cushnoc Cantina, the latest offering from the folks behind Cushnoc Brewing Co., is slated to open Jan. 1 in Waterville, said Tobias Parkhurst, a co-founder and one of five partners.
The group announced plans in May to open a cantina-style restaurant as the popular Augusta-based brewery pivots from its popular pizza and beers to serve tacos and cocktails.
A Facebook post earlier this month said the cantina is looking for servers and cooks to join the crew by mid-December.
The restaurant is located on the ground floor of the Colby College-owned residence hall at 150 Main St. and can seat around 80 people.
Cushnoc has three locations in Augusta: Cushnoc Brewing Co., is on Water Street, Cushnoc Brewing Co. Tasting Room is on Front Street in the city’s historic downtown, and Cushnoc Brewing Co. Annex is located on North Belfast Avenue.

FAIRFIELD RUNS ON DUNKIN’?
State transportation officials have approved an application to build an 1,850-square-foot Dunkin’ with a drive-thru window at 247 Main St. in Fairfield.
Construction is expected to begin in late 2024 with completion and occupancy expected in fall 2025, according to a Dec. 3 report from Stephen Landry, state traffic engineer for the Maine Department of Transportation.
The Dunkin’ location was granted a conditional use permit in July following a proposal from JFJ Holdings, LLC. Maine DOT has now approved the company’s traffic movement permit application, allowing the ball to start rolling on construction.
In addition to coffee and the Dunkin’ menu, the development is estimated to bring an increase of 223 vehicle trips weekdays during the peak morning hour.
