Barbara Jackson

PALERMO – Barbara Jackson, 87, passed away peacefully at home with her son by her side on Tuesday, May 26, 2026.

Barbara was born on Feb. 8, 1939, in Prospect, to Manly True Shute Sr., and Velma Shute, she was the youngest of 11 children. She graduated as valedictorian from Stockton Springs High School in 1957. She met the love of her life, Elmer “Lee” Jackson Jr., in 1959, with whom she spent 66 wonderful years of marriage. Together they showed all of those around them what true love looked like. There was no one that loved her more than her husband.

Barbara spent 32 years as the cook and manager of the Palermo Consolidated School lunch program, generations of school kids will always remember her delicious yeast rolls! It was there she shared her love for cooking and her warm presence with all her colleagues and children around her. She loved reading, baking, scrapbooking, crafting, gardening and had a special love for birds, especially cardinals. She was proudest of her son, daughter, grandsons, and granddaughter, especially their accomplishments and the people they have become.

Above all, Barbara loved her family so deeply. She is survived by her husband, Elmer “Lee” Jackson Jr.; her children, Jeffrey Jackson and wife Carol, daughter Cindy Hall and husband Jaison; grandsons, Colin and Heath Jackson; granddaughter Michelle Johnson; great-grandson Bryson Johnson; great-granddaughter Sadie Johnson; bonus grandson Seth Johnson and many nieces, nephews and cousins.

She was predeceased by her parents Manly True Shute Sr. and Velma Shute; her brothers, Richard, Lester, Manly True Jr., and Emery Shute; her sisters, Edna Shute, Emily Shute, Pearl Seekins, Justina DiTaranto, Isabel Milewski, Theodate Wilcox; and her grandson Jackson Norris.

Barbara was a breast cancer survivor whose kindness, warmth and strength touched everyone who was fortunate enough to know her. A special woman who always had a way of making everyone feel so welcome and her love of cooking flowed to those lucky enough to be around her, there truly isn’t anyone that had a gift for cooking like she did.

The family wants to express so much gratitude to all the staff at Andwell Health Partners, the staff at Family Focused Healthcare, special family members Annie Pickford and Bernys Doak and special friend Jean Johnson for their care and compassion for Barbara the last few months.

There will be a celebration of life held at a future date.
