The owners of Bolster, Snow & Co., a new restaurant that will be located in The Francis hotel on Congress Street, have set a target opening date of Sept. 1, according to a liquor license application filed with the city.

The Francis is a 15-room luxury hotel being developed in the historic Mellen E. Bolster House at 747 Congress St. The hotel is named after the architect who designed the building, Francis Fassett, and the restaurant is named for the Bolster family, for whom the home was built in 1881, according to the application filed by co-owner Tony DeLois.

DeLois, who is from Yarmouth, most recently worked as sous chef at Il Buco in New York City and as a sous chef and manager at Union Square Events, part of restaurateur Danny Meyer’s Union Square Hospitality Group.

Bolster, Snow & Co. will offer daily dinner service and brunch on the weekends. A sample menu includes dishes such as wild boar ragu, lobster, seared scallops and Rohan duck breast.

The executive chef will be Nick Verdisco, who was most recently the sous chef at The Inn at Pound Ridge by JeanGeorges in Pound Ridge, New York.
