It is late July, and most vegetable gardeners consider this to be harvest season. But if you have room, it is also planting season.
Lettuce and spinach can be planted through September. Admittedly, they are leafy as opposed to solid vegetables. Beets are a solid vegetable, but you can still plant them through mid-August and get a harvest.
Beets are easy to plant, in part because they are fairly large seeds that you can plant individually. Put them in the ground about an inch apart in bands that are about 24 inches wide, and plant them roughly a quarter inch deep. They aren’t fussy about soil, but if this summer continues dry, keep them moist until they sprout.
Before the end of October, you will have nice, round, sweet but tangy beets.
And if you want, you can eat beet greens before then.
