A father-daughter team aims to launch a bakery in Wiscasset this summer.

Emily Brill and her retired dad, Steve, plan to open Brill’s Bakery this summer at 27 Summer St., in the former site of Lilac Cottage Antiques. The 400-square-foot space will be takeout-only.

Emily Brill said she and her dad are splitting the baking duties. He’ll focus on sourdough, including a molasses-oat porridge version, as well as Japanese milk breads, while her purview is sweet pastries.

Brill said her offerings will include chiffon cakelets, international baked goods, cookies and sticky buns. She also plans to offer a selection of flavored focaccia. They’ll use Maine Grains flour for breads, and as many local products as possible for fillings on the sweet pastries.

Brill said she and her dad have been baking for friends and family for some time. “We feel we’ve perfected what we do, and we want to start sharing it with more people,” she said.

The Brills expect to give area residents sneak peeks at their products with intermittent pop-ups at the Summer Street venue through the winter and spring.
